Potato Fritters (Perkedel Kentang Kornet)

I come back with another recipe. It’s very simple and Indonesian people usually eat this as a side dish. Several days ago, I had gathering with my friends. We cook soto ayam and potato fritters (perkedel kentang) and eat together. Soto ayam and perkedel kentang are a perfect pair! 😀 For today, I wanna share recipe for the potato fritters and will share the recipe for soto ayam later, OK! 😀

Ah, as usual, note that I usually used my feeling (approximation) to measure the ingredients. However, I will try my best to give you the amount of measurement for every ingredient. The key is just be confident, and feel free to adjust it with your palate. 🙂

So let’s check the recipe down below! 🙂

Ingredients:
Bahan-bahan:

1 kg kentang (atau sekitar 5-6 buah kentang ukuran sedang)
1 kg potatoes (or around 5-6 mid-sized potatoes)

100 gr kornet sapi (atau kira-kira 1/2 cup) — bisa diganti daging cincang (dicincang halus)
100gr corned beef (or approx. 1/2 cup measurement) — you can use minced beef instead

1 batang daun bawang ukuran sedang, iris
1 shoot of medium size green onion, chopped

1-2 batang seledri (atau kira-kira 1/4 cup sekitar 50gr), iris
1 stalk of chinese celery (or approx. 1/4 cup measurement ~ 50gr), chopped

3 buah telur (2 telur untuk  adonan kentang, 1 telur untuk lapisan sebelum digoreng)
3 eggs (2 eggs for the potato mixture, 1 egg for covering before deep frying)

minyak untuk menggoreng
cooking oil

Bumbu Halus (grounded spices):

4-5 siung bawang merah
4-5 cloves of shallot, chopped

3 siung bawang putih
3 cloves of garlic, chopped

1/2 sdt garam (atau secukupnya)
1/2 tsp salt (or adjust to your palate)

1/4 sdt merica bubuk (atau secukupnya)
1/4 tsp white pepper (or adjust to your palate)

How to cook?
Cara memasak

  1. Potong-potong kentang dengan ketebalan kurang lebih 1.5 cm (jangan terlalu tebal, agar cepat empuk saat digoreng)
    Cut potatoes around 1.5 cm of thickness (don’t cut it too thick so that the potatoes can cooked quickly)
  2. Panaskan minyak dalam wajan dengan api sedang
    Heat the oil inside the pan with medium heat
  3. Saat minyak sudah cukup panas (jangan terlalu panas) masukkan kentang ke dalam penggorengan. Goreng hingga empuk (bisa dicek dengan menusuk kentang dengan garpu)
    When the oil already in a right heat, fry the potatoes until it soft (you can check by pin a fork on it)
  4. Haluskan kentang yang sudah empuk dan cukup matang.

  5. Masukkan bumbu halus, irisan seledri, irisan daun bawang, kornet, dan 2 buah telur ke dalam kentang yang sudah dihaluskan, aduk hingga rata
    Put the ground spices, chopped celery, chopped green onion, corned beef, and 2 eggs inside the mashed potatoes, then mixed.
  6. Tambahkan garam dan merica secukupnya
    Add seasoning (salt and pepper), adjust the seasoning to your palate.
  7. Kepal adonan kentang membentuk bulat-pipih.
    Knead the potato dough into a round-flat form (as the picture).
  8. Masukkan adonan kentang yang sudah dibentuk ke dalam telur yang sudah di kocok lepas, kemudian goreng sampai kuning kecoklatan
    Cover the potatoes with the beaten egg, then fry it until it turns golden-brown
  9. Angkat, kemudian tiriskan.
    Drain on paper towel. 

Voila! It’s done!
Hopefully it tastes good. 😀
