Sweet and Sour Popcorn Chicken (Ayam Koloke)

Welcome back to my blog with another recipe to share. 🙂

For now, I want to share the recipe of sweet and sour popcorn chickenIn Indonesia, it usually can be found in chinese food restaurant and so called ayam kolokePersonally, I looooovvee this food 😀 Because it consists of fried popcorn chicken with sweet and sour sauce. How did I make it? Let’s check it out! 😀

Ah, note that I usually used my feeling (approximation) when adding the ingredients. But, I will try my best to give you the amount of measurement for every ingredient. The key is just be confident, and use your palate, ok? 😀

Ingredients:
Bahan-bahan:

For popcorn chicken:

Dada ayam (kira-kira sekitar 250~500gr), potong dadu kira-kira 2 cm x 2 cm (atau sesuai selera)
breast chicken fillet ( approx. 250∼500gr), chop into bite-sized pieces

1 butir telur (tambahkan 1 butir telur bila perlu)
1 egg (add 1 more egg if needed)

300 gr (atau 1,5 cup) tepung serbaguna
300 gr or 1,5 cups of all purpose flour

2 sdm bawang putih bubuk
2 tbsp garlic powder

1 1/2 sdm ketumbar bubuk
1 1/2 tbsp coriander powder

1 sdt garam
1 tsp salt

minyak untuk menggoreng
oil for frying

For sweet and sour sauce:

1/2 buah bawang bombay, iris memanjang
1/2 onion, long sliced

1 siung bawang putih, cincang
1 clove of garlic, chopped

1/2 buah paprika merah atau hijau atau keduanya, potong kecil-kecil (kalau suka paprika, bisa pakai 1 buah paprika utuh)
1/2 red/green/both bell peppers, cut into small pieces (if you really like it, use 1 whole red peppers)

100 gram nanas segar, potong kecil-kecil (kalau suka lebih asam, bisa ditambahkan sesuai selera)
100 gram fresh pineapple, cut into small pieces (added more if you like the sauce be more sour)

1 buah wortel, iris tipis dan memanjang (boleh di-skip)
1 carrot, long sliced (optional)

350 ml saus tomat
350 ml tomato sauce

2 sdm saus tiram
2 tbsp oyster sauce

100 ml air matang
100 ml water

1 atau 2 buah cabe merah, iris tipis (kalau gak suka pedes, skip this part)
1 or 2 red chili(es), sliced (optional)

gula, garam, merica secukupnya untuk menyesuaikan rasa
a pinch of sugar, salt, and pepper for flavoring

tepung tapioka secukupnya, bila perlu
corn starch if needed

How to cook?

For popcorn chicken:

  1. Tuangkan tepung serbaguna, bawang putih bubuk, ketumbar bubuk, dan garam ke dalam wadah, kemudian aduk rata
    Mixed all purpose flour with garlic powder, coriander powder and salt in the mixer bowl. 
  2. Kocok lepas telur dalam wadah terpisah
    Beat off the egg in separated bowl
  3. Masukkan potongan dada ayam ke dalam kocokan telur, aduk rata
    Put the diced chicken into the beated egg, then mixed it up
  4. Masukkan sedikit demi sedikit ayam ke dalam tepung (jangan dituang, lebih baik ambil satu per satu), cubit-cubit ayam untuk memastikan semua bagian daging ayam tertutup tepung
    Put the chicken into the flour (don’t pour the chicken, it is better to put it one by one), pinch the chicken to ensure whether the chicken has been fully covered by the flour
  5. Panaskan minyak dalam wajan dengan api sedang
    Heat the oil inside the pan with medium heat
  6. Masukkan potongan ayam yang sudah terbalut tepung ke dalam wajan dengan minyak yang sudah cukup panas (catatan: temperatur minyak sangat penting, karena apabila terlalu panas, ayam akan crispy di luar, tetapi bagian dalam daging bisa saja masih mentah. Maka, pastikan api yang digunakan tidak terlalu besar) 🙂
    Put the chicken one by one into the heated pan (noted that temperature of the pan/ oil is important. If the pan is too hot, the chicken will be crispy outside but under cooked inside. Hence, make sure that you are using a medium heat) 🙂
  7. Goreng hingga kuning kecoklatan
    Fry until the chicken turn into golden-brown color. 
  8. Angkat, kemudian tiriskan.
    Drain on paper towel. 

For the sweet and sour sauce:

  1. Panaskan minyak dalam wajan dengan api sedang
    Heat the oil inside the pan with medium heat
  2. Masukkan bawang putih yang sudah dicincang, tumis hingga harum
    Saute chopped garlic until the smell comes out
  3. Masukkan bawang bombay, paprika, wortel dan cabe merah, tumis hingga layu
    Saute the onion, bell peppers, carrot and chilies until it turns shriveled
  4. Tambahkan saus tiram, aduk rata
    Add oyster sauce, mixed
  5. Tuangkan saus tomat, dan tambahkan rasa dengan gula, garam, dan merica secukupnya
    Pour the tomato sauce, seasoned with sugar, salt, and pepper. 
  6. Tuangkan air secukupnya, apabila dirasa kurang kental, bisa ditambahkan tepung tapioka (maizena)
    Pour water, if you need it to be more condensed, you can add 1 tbsp of corn starch until you find it condensed enough. 
  7. Masukkan nanas ke dalam saus, didihkan sampai nanas mulai layu.
    Put pinapples into the sauce, cooked until it started to shrivel. 
  8. Angkat dan sajikan bersama dengan ayam goreng tepung
    Remove from heat and pour it into a bowl. Ready to serve! 

Woooowww, writing this recipe makes me drooling. 😛 hihihihi~
Ah, if you need more sour taste for the sauce, you can add either more pineapple or add 1 tbsp vinegar. But, I prefer to add more pineapple. 😀

Voila! Sweet and Sour Popcorn Chicken is ready eat! You can it with french fries, or warm rice! 😀 Both taste incredibly delicious!
